Mixed salad

Mixed salad is made ​​from many kinds of vegetables and always is present in the menus of Macedonian traditional restaurants.

Needed ingredients: 2 tomatoes, 2 cucumbers, 2 carrots, 2 slices of cheese, 2 radishes, ½ beetroot, ¼ cabbage, olive, edible oil, salt

Preparation method:

The cucumbers are into thin slices, tomatoes are cut into four pieces, carrots and beets are grated, cabbage is chopped and radishes are cut in thin circles. All ingredients are arranged in oval plate according to desire. Salt is added and it is sprayed with edible oil to taste.

Potato salad

This salad is prepared for everyday enjoyment. It is the best to serve it warm with olives and cheese.

Needed ingredients: 1 kg. potato, 2 onions, parsley, edible oil, vinegar, salt

Preparation method:

The potatoes are washed and placed into pot with hot water to boil. Once cooked, they are piled, cut into small cubes and put in a bowl. Finely chopped onion, salt, edible oil and vinegar are added in the bowl to taste. It is nicely mixed and finely chopped parsley is added.


For preparing this salad is needed more time because of the processing of vegetables. It can be served with bread slices or as addition to mixed salad.

Needed ingredients: 1 kg. green peppers, 1 kg. tomatoes, 1 eggplant, 3-4 cloves of garlic, edible oil, salt

Preparation method:

Peppers are washed and dried, the handles and the seeds are removed and then they are baked and peeled. Eggplant is baked and peeled. Tomatoes are roasted in the oven, then peeled and placed on the strainer to drain. Cloves garlic are cleaned, salted and grinded. Peeled peppers, tomatoes and squeezed tomato are grinded as well. When everything is nicely grinded, the ingredients are mixed. Finally salt is added to taste and while mixing edible oil that should be hot is slowly added.

Roast peppers with garlic

This salad can be prepared during the whole year as long there is fresh peppers. It is best to combine it with beans and variety of meat dishes

Needed ingredients: 10 peppers, 3 cloves garlic, 50 ml. of cooking oil, 50 ml. vinegar, salt.

Preparation method:

The fresh peppers are washed, dried and roasted from all sides. Once cooked, put them in a bowl and cover them until they cool down and able to be peel. Once the peppers are nicely peeled, add finely chopped garlic, salt and pour cooking oil and vinegar. They should be left aside for a little while and then served.

Shopska Salad

Traditional, delicious and easy combination of several types of vegetables sprinkled with grated white cheese gives the irreplaceable taste of the Shopska salad, which is often present on every Macedonian table, as appetizers and accompanied by a glass of homemade brandy.

Needed ingredients: 1 green pepper, 1 onion bulb, 2 tomatoes, 2 cucumbers, 200 gr. white sheep cheese, Cooking oil, salt.

Preparation method:

Peel the cucumbers and together with the tomatoes cut them into cubes. Finely dice the onion and the pepper in circles. All the vegetables are placed in a deeper pot and add cooking oil and salt to taste. Once the ingredients are mixed, add grated white cheese on top


Tarator is summer and refreshing salad, which can be consumed at any time of the day.

Needed ingredients: 5 ml. yogurt, 2 cucumbers, 4 cloves garlic, Parsley, Cooking oil, Salt.

Preparation method:

Peel the garlic, add salt and crush it. The crushed garlic is added to cooking oil and stirred until they merge. In a deeper pot put well chilled yogurt, add the garlic mixture to it and stir it. Cut the cucumbers into small cubes and add them last to the dish with yogurt. Put chopped fresh parsley on top of the salad.
